  • 1/4 C Egg Whites
  • 1/4 Cup Oat Flour (I ground up oatmeal)
  • 2 Tbs. Canned Pumpkin
  • 2 Tbs. Unsweetened Applesauce
  • 1 Tbs. Whole Wheat Flour
  • 1 Tsp. Stevia
  • 1/2 Tsp, Baking Powder
  • 1/4 Tsp. Pumpkin Pie Spice
  • 1/4 Tsp. Vanilla
  1. Mix pancake ingredients.
  2. Pour batter on prepared skillet; cook until one side bubbles and then flip.
  3. Plate Pancakes and add topping.


  • 3 Tbs. Plain, fat free Greek yogurt
  • 1 Tbs. Canned Pumpkin
  • 1/2 Tsp. Stevia
  • 1/4 Tsp. Cinnamon 
  • 1/4 Tsp. Vanilla
