Protein Pancake Mini Muffins

Don't settle for garbage convenient foods for your kids!  As kids go back to school, I challenge you to slow down and take time in the kitchen with your kids.  The kids love spending time in the kitchen with you.  It empowers them to make their own food - and believe it or not?  They love eating the food they make.  They are so proud of their creations.

Try making these mini Kodiak Protein Muffin Cups.  So quick, simple and convenient for busy mornings on the go.

And believe it or not, one tray of these muffins is one serving for an adult - the equivalent to 3-4 small pancakes.


  • 1/2 Cup Kodiak Protein Mix
  • 1/2 Scoop Protein Powder
  • 1/2 Cup Water (Plus 2 Tbs as needed)
  • 1/2 Tsp. Vanilla
  • 1/2 Tsp. Cinnamon

Can top with any toppings:  chopped nuts, mini chocolate chips, coconut flakes, craisins, etc.

Bake at 350 degree oven for 10-12 minutes.
